Strawberries & Cream Protein Cookie Dough Bark

This strawberries and cream protein cookie dough bark recipe is a beautiful way to enjoy a delightful treat, while also getting in more clean protein.


Ingredients for the Cookie Base

  • 1/4 cup almond butter (any nut butter will work)

  • 1 tablespoon coconut oil

  • Pinch of salt

  • 2 scoops vanilla or strawberry clean protein powder 


Ingredients for the Toppings

  • 2 tablespoons strawberry jam

  • 1/2 cup white chocolate chips (I used Lily's)

  • 1 teaspoon coconut oil

  • 1 cup freeze dried strawberries

 


Instructions

  1. Soften the almond butter and coconut oil together in a small bowl for about 30 seconds in the microwave. Stir in the salt and beef protein powder.

  2. Spread the mixture over a parchment paper-lined baking sheet into a thin (about 1/4 inch-thick) layer.

  3. Spread the jam over the top using a spoon or fork to get a nice thin layer.

  4. For the chocolate topping, combine the white chocolate chips and the teaspoon of coconut oil together in a small bowl. Microwave for 30 second spells until melted (it took me about 1 minute). Stir until smooth and then pour over the cookie base.

  5. Spread the freeze dried strawberries over the top, freeze for 30 minutes, then break or cut into pieces and enjoy!
  6. For storage: I stored mine in an air-tight container in the freezer.
