This strawberries and cream protein cookie dough bark recipe is a beautiful way to enjoy a delightful treat, while also getting in more clean protein.
Ingredients for the Cookie Base

1/4 cup almond butter (any nut butter will work)

1 tablespoon coconut oil

Pinch of salt

2 scoops vanilla or strawberry clean protein powder
Ingredients for the Toppings

2 tablespoons strawberry jam

1/2 cup white chocolate chips (I used Lily's)

1 teaspoon coconut oil
-
1 cup freeze dried strawberries
Instructions
- Soften the almond butter and coconut oil together in a small bowl for about 30 seconds in the microwave. Stir in the salt and beef protein powder.

Spread the mixture over a parchment paper-lined baking sheet into a thin (about 1/4 inch-thick) layer.
- Spread the jam over the top using a spoon or fork to get a nice thin layer.
- For the chocolate topping, combine the white chocolate chips and the teaspoon of coconut oil together in a small bowl. Microwave for 30 second spells until melted (it took me about 1 minute). Stir until smooth and then pour over the cookie base.
- Spread the freeze dried strawberries over the top, freeze for 30 minutes, then break or cut into pieces and enjoy!
- For storage: I stored mine in an air-tight container in the freezer.
